Blackened SPAMfish
By Mike Schiller
Yet another way to breathe new life into this canned meat sensation while feeding and entertaining your fellow campers.
Prep time: 15-30 minutes
Feeds: 3 hungry campers with a high tolerance for processed meat
1 can SPAM
1 packet Cajun seasoning
2 tablespoons cooking oil
Cut SPAM into ¼-inch slices. Then cut each slice into the shape of a fish (save the trimmings to eat at breakfast). Rehydrate the Cajun spice mix in a camp bowl and dip both sides of the SPAMfish in it. Place the SPAMfish in a skillet with cooking oil and fry to taste (generally, more fried is better). Serve it with a side dish of couscous, polenta or rice.
